Food Truck Stories with Cheezen

Tell us all about your food truck, what makes you special?
When Cheezen started back in 2014, we were the first gourmet grilled cheese food truck In New Jersey. Our concept started out with the question: What makes people happy? What do people enjoy to eat? With those questions in mind, Cheezen was created with fresh quality grilled cheese sandwiches on handmade artisan bread. Anybody can make a grilled cheese, but it’s our team’s loyal dedication and attention to detail that makes our food extra special.

Why did you decide to open a food truck?
I decided I wanted to start a food truck because I thought it would have been the coolest thing on the block, but my real motivation to start a food truck business was my children. I was making dinner one night and I was making grilled cheese and soup. I already had the dream to start a truck but my other passion is baking – and 3 months later Cheezen was ready to take on the market. From there we knew we wanted to serve our delicious food to everyone in the state. I also wanted to create something where hopefully in years to come, I will be able to pass something off to my kids, or at least a concept, so they have the tools and knowledge to help them grow to successful business owners.

What’s your most popular menu item?
Currently our most popular item is our Bourbon Bacon Jam Grilled Cheese. This is made by first cooking off a lot of chopped hickory bacon. Then we dice up onions and sauté them down with spices and most importantly the bourbon. Afterward we toast our handmade artisan style sourdough bread, add the aged gruyere and sharp cheddar. Then at the end we add our Bourbon Bacon Jam and top it with our homemade chipotle aioli. The result is the award-winning Bourbon Bacon Jam Grilled Cheese!

Tell us about a favorite or memorable event you’ve participated in?
We have probably participated in over 300 events in the last four years. I must say that our most memorable event was Monmouth Park Food Truck Festival where we won Best Guiltiest Pleasure – by a panel of judges, including Pete Genovese from NJ.com. Winning this was huge for us. The excitement of winning this award was earth lifting! To see our hard work and dedication and our mission all come true to us in one afternoon – during the busiest we have ever been – at one single event! We won!!! We could not believe it. We all cried, service stopped and we all took a moment to hug each other!

What’s the best part about having a food truck?
Serving our fans our food is the reason we continue to do what we do day in and day out. I am so grateful and so humble for what we do. Seeing our fans do a happy dance while their eating one of our grilled cheese sandwiches is my feel good moment.

Do you do weddings and/or catering?
Yes and yes! We currently have weddings booked at many reception halls throughout the state. Weddings have become more and more popular to have Food Trucks as another feature or station at the reception. We also provide at home catering service with our trucks. For celebrations such as graduation parties, birthday parties, Bar Mitzvah and Bat Mitzvahs, etc. Customers love the fact that we can come and go with no cleanup for the client afterwards.

Where can we find you on the street or do you have restaurant?
We service all over New Jersey during lunch hours.-Check our calendar for location of upcoming lunch service and events. But if we aren’t out trucking along you can always find us at our restaurant located at 108 Easton Ave., New Brunswick, NJ in the heart of Rutgers Campus attached to Olde Queens Tavern.

Food Truck Stories with Tacoholics

Tell us all about your food truck, what makes you special?
Our food truck is a very simple huge matte black truck that pops with the big Tacoholics logo written in orange. What differentiates us from the rest of the taco trucks around is our homemade specialty sauces, like Crack BBQ sauce and variations of tacos made with fresh ingredients. We are always creating new fun, flavors that go a little outside of the box of the traditional taco everyone is used too. To us presentation is everything and we pride ourselves on always serving the most eye opening tacos. If it looks great, it tastes even better!

Why did you decide to open a food truck?

When the three of us (Nick DeAngelo, Rob Bruno and Lou Raccuglia) took a trip to Florida after we graduated college, we realized that the only food we were eating were tacos. Literally every meal we had for the five day trip seemed to be tacos. With that inspiration and the popularity of the food truck scene we figured that if we serve the food that we enjoy eating, then everyone else would love it too. Turns out that was the right decision. Everyone loves tacos!

What’s your most popular menu item?
Hands down the Bang Bang Shrimp Tacos, it is a creamy sweet Thai chili sauce on top of fried shrimp with pico de gallo, lettuce, and cheese. In our own words the sauce is “Out of this World”

Tell us about a favorite or memorable event you’ve participated in?
It’s very hard to pick just one event that was our favorite and most memorable. One of our very first events was the Atlantic City Food Truck Festival. We prepped for two days and sold out of everything in one day. Our line seemed to be endless, and that was when we realized how many people loved our food. It was that moment that we realized that our decision to start a food truck was the right one. Taking part in the Monmouth Racetrack Jersey Shore Food Truck Festival was another huge goal of ours. We were lucky enough to have the chance to participate in May of 2017. Our line seemed never ending, and we had the pleasure of meeting many other food trucks that we had never met before.

What’s the best part about having a food truck?
This is another hard question to answer. First of all, the best food we have ever eaten has come from food trucks. I don’t know what some of these other trucks are doing with their ingredients, but my mouth waters over their dishes. At every event we all trade food, and it’s priceless when another vendor grabs some tacos for their staff. Another thing we really love is the positivity towards each other that all the food trucks bring. You can’t beat the feeling of the family atmosphere among the food truck owners. Every single event we attend, we are all rooting for each other to do well. We all want to help each other, not necessarily compete with each other.

Do you do weddings and/or catering?
We’re always up for weddings and catering. With just one truck, it sometimes difficult to do, but with our new restaurant were always looking forward to doing more.

Where can we find you on the street or do you have restaurant?
On November 25th we opened our doors to our first restaurant in our own hometown!
The Tacoholics Grill
1820 Lanes Mill Rd.
Brick, NJ 08724

Food Truck Stories with Cheech A’ Cini’s

Tell us all about your food truck, what makes you special?
Cheech A’ Cini’s is a family business. We are a husband and wife team that works diligently to provide the best quality of food and service wherever we bring our truck. We are a proud small business that loves to work with other small businesses in the area. When you eat a Cheech A’ Cini’s, you are helping us honor our family members who taught us how to cook. We pride ourselves in using our family recipes as the foundation of our food.

Why did you decide to open a food truck?
We decided to open a food truck because Frank, our chef and my husband missed being in the kitchen. Frank is a CIA graduate with tons of kitchen experience. We decided that having a food truck would be a great way to get our food out there in many different locations. Owning a food truck, you can be your own boss and create dishes to your liking. We wanted to add our own twists to some Italian Street Fair. We also wanted to share with everyone our family recipes that we grew up on. Frank and I grew up in NY and NJ, so Italian Food in these areas are extremely popular. Everyone has their own version of how they do things. Owning a family business like this helps us pay tribute to our roots. We strive on bringing people together when they come to eat at our truck or get catering from us. Cheech A’ Cini’s tries to give you the experience of “Sunday Dinner” every time you visit us.

What’s your most popular menu item?
Our Most Popular Menu Item is the Pastacini! (Pass-tah chee-knee) A Pastacini is a family recipe that was passed down from our Nanny Rae. She would make a special pasta dish using all types of Italian Cheeses, macaroni and dried sausage. Nanny would mix it together and bake it. We called it Pastird and it was only around Easter time that she made this dish. Chef Cheech loved it so much that he took the recipe, modified it and created the Pastacini. Everyone that tries the Pastacini is honoring our late grandmother’s legacy.

Tell us about a favorite or memorable event you’ve participated in?
Our Most Memorable event was our 1st event. We were a mystery truck, we didn’t have our signs up yet but people saw a line forming so everyone had to come see what the fuss was all about. Then we watched those same people come back on line to get more food from us to bring home. That is when we realized we were on to something. To this day, those same people are still our loyal customers.

What’s the best part about having a food truck?
We can travel place to place and share our food with everyone. Being mobile gives us a better reach for the tri-state area.

Do you do weddings and/or catering?
Yes, we cater weddings and wedding after parties. We have a great holiday catering menu. Give us a call to get the details 347-973-9754

Where can we find you on the street or do you have restaurant?
Our Food Truck is currently closed for the winter season and we just focus on catering. We have a holiday catering menu out now. We also have our Pastacini’s in the deli case of Top Tomato in the Travis Section of Staten Island (3579 Victory Blvd SI NY 10314)

Food Truck Stories with Shore Good Eats N Treats

Tell us all about your food truck, what makes you special?
We started out catering and doing festivals and events under a tent. A few summers ago, we were doing an event on the bay in Manahawkin, and it rained both days. After two days of the wind blowing the rain sideways while we tried to hold down the tent and cover all of our equipment, I looked at my wife and said, “if we don’t have a truck by next season, we are done with this $#!%.”
We began researching different options and quickly realized how much more we could do if we had a truck. As luck would have it, we saw a trailer in a parking lot with a for sale sign on it that was identical to the one we were considering. After wrapping it with our Shore-themed logo and adding some personal touches, Shore Good Eats N Treats was born in May of 2016. Our concept born from our love of the Shore: serve shore eats and treats all year round. Our first event was in Bradley Beach, and the truck design and the lifeguard stand that serves as our menu were a huge hit. We became a quick success because everything we serve is made from scratch in reasonably-priced huge portions.

What’s your most popular menu item?
People absolutely love our enormous servings of butterfly fries with cheesy bacon ranch topping. Our mac & cheese egg rolls are a close second.

Tell us about a favorite or memorable event you’ve participated in?
We have a few favorite events each year but our most memorable event was when a group of festival attendees came to our truck three separate times for food. At their final visit they said, “There are 40 food trucks here, and your food is the best by far!” Since we were relatively new, that was such a huge compliment – especially since there are many great trucks out there and we love eating their food! It was validation for our hard work and high-quality product.

What’s the best part about having a food truck?
Being a part of food truck events, definitely. Food truckers are like a big family. You would think that because we are all in competition to earn business from customers that the truckers would keep to themselves and not be friendly, but it’s actually just the opposite. We all help each other, look out for each other and share great friendships. It’s rewarding to make connections and develop a following among our customers. It’s very gratifying to have people come to our truck event after event: we learn about their families and their interests, and they learn about ours. We recently even had a wedding proposal at our truck! It’s also very heartwarming to develop relationships with event promoters who think enough of our business and product to reach out to us and invite us to their events. We are humbled every time we are asked to participate in an event.

Do you do weddings and/or catering?
We have a full line catering business and do weddings and corporate events. You can see our catering and wedding menu on our shoregoodeats.com

Where can we find you on the street or do you have restaurant?
We are at festivals and events all over the tri-state area along with private and corporate events and we’re opening our first café in December. Shore Good Eats N Treats t is located at 120 West Sylvania Avenue in Neptune City. We have a lot of specialty foods on the menu but we will also have a “From the Truck” section where you can order items that you would get from the food truck.

Food Truck Friday – On the Road with The Tasty Trolley

How did you get started?
Tom Cappello, owner of The Tasty Trolley, is a numbers guy. He’s been in various aspects of the food industry since 1977, and he’s learned a lot in that time. He opened Pizza Star, Kuppers French Fries made in Italy, and Tommy’s Food Court on the boardwalk in Seaside Heights in 1980 and has owned many successful restaurants in New Jersey, including Gaetano’s and Mr. Pizza Slice in Red Bank. He purchased the Wallace Street building that would become a Red Bank landmark in 1999 and opened Gaetano’s on July 13, 2000, selling it just last year. Boasting one of the few open kitchens in the area preparing fresh, tasty Italian specialties – more than just a spaghetti and meatballs joint – was just one reason for Gaetano’s popularity.
We recently spoke with Tom about his travels in the food business.
It seems these days that many people who want to go into the food business start with a food truck and then “move up” to a brick-and-mortar. You did things the other way around. Why?
“I’ve been doing this a long time. Profit margins are better in the festival business, especially if your restaurant doesn’t have a liquor license. If you lose business during a particularly bad January, you’re not going to make that up because the weather is nice in July. At festivals, it’s entirely up to you to make the most of the opportunity.”

Why did you decide to open a food truck?
“Many events would only allow food trucks, but I noticed some of the difficulties with the trucks. Most of the trucks had long lines, they were so high that you couldn’t see the food and they only had one window to serve from. and in the early days the trucks all looked the same. I knew I wanted something different. It’s all about the merchandising. I wanted something eye-catching, with a carnival feel, that would attract kids.”
“It wasn’t until I saw a wedding trolley parked outside St. James in Red Bank that I realized what my truck had to be.” The trolley is low, eye-catching, and most importantly, has lots of windows.
Tom located his 1998 trolley in Chicago. While driving it back to New Jersey with his son Mike, they brainstormed what the truck would look like. Mike sketched out a basic idea of a tongue sticking out, not unlike the one made famous on the Rolling Stone’s Sticky Fingers.
To have his trolley customized to his specifications, Tom went to the leaders in industry, Custom Food Carts in Hammonton, third-generation specialists whose grandfather started with the original lunch carts and hot dog wagons and now create food trucks for the likes of Disney, the movie business, and major stadiums across the country. Built to his specifications, the trolley features four steam tables and, most importantly, two serving windows to move customers quickly.  Having his start with four businesses on the boardwalk taught Tom the value in getting food out quickly. “The trick in the food truck business is to realize how much time you have to make your money. If you only have six or eight hours, you have to be efficient and ready to serve quickly in to maximize each opportunity.”
The Tasty Trolley has been featured at events all over New Jersey, from Jersey City down to Wildwood. What are some of their most popular items? The Mac & Cheese Balls and grilled cheese sandwiches. The best part of running a food truck? The ease of setting up: being able to just pull up at the beginning and drive away when the day is done.
Thanks to word of mouth and being seen – and tasted – at lots of events, they’re lining up lots of private parties as well. Contact the Tasty Trolley at www.thetastytrolleynj.com

What’s your most popular menu item?
People love the Mac & Cheese Balls, Grilled Cheese and Fried Calamari (Doesn’t serve fish from the truck)

Do you do wedding and/or catering?
Yes, the Tasty Trolley does parties and weddings.
You can contact them at www.thetastytrolleynj.com

Food Truck Stories with Oink and Moo BBQ

Oink and Moo BBQ will be one of the wonderful vendors at the Allaire BBQ & Brew Fest, April 29 & 30 at Allaire State Park (more details below) – Photo by Oink and Moo

Tell us all about your food truck, what makes you special?
We make everything from scratch! From our rubs, to our sauces and slaws, our focus remains on
providing high quality chef inspired food. Last year we were named the number one truck in America by the Daily Meal and this year CNBC listed us as their most popular food truck in America.

Why did you decide to open a food truck?
It comes down to a love of great food. Josh founded Oink and Moo in 2012, shaping the menu off of his favorite American BBQ styles from around the US. Soon after, Sean and Jon partnered with him, taking the company to the next level. Currently we have 3 trucks and opening our second restaurant in the next month. Hopefully we won’t be slowing down any time soon.

What’s your most popular menu item?
That’s a tough one. It surprisingly depends on the day. Our baby back ribs are really the show stopper, but we have been given awards for our chipotle chicken tacos, chili and sliders as well. I think the key is that our menu has something for everyone, including vegetarians.

Tell us about a favorite or memorable event you’ve participated in.
We have been able to participate in some really cool events. We catered for the Macy’s 4th of July Fire Work Show one year which was awesome. We are also vending at this year’s NFL Draft in Philly which I think will go down as a top event for us. Did I mention how great all of Spark’s events are?

What’s the best part about having a food truck?
Food Trucks have changed the catering game. They provide flexibility as well as a quality product. Having the ability to take your business to customers is a unique aspect, but it also has its down sides. I don’t think people realize how involved running a food truck really is.

Do you do weddings and/or catering?
Yes!! You name it and we cater it. Weddings have been very popular in recent years. Food trucks are catching on, plus they make venues that cannot provide food still a possibility. We can bring the truck right to your office, into your driveway or backyard. Corporate lunches have been a great way to increase our client’s employee engagement.

Where can we find you on the street or do you have restaurant?
Our truck locations change daily, but our schedule is posted on www.OINKandMOObbq.com.
Our restaurant is located at 54 Broadway, Florham Park NJ and we are opening another at 910
Haddonfield-Berlin Road, Voorhees NJ in the next month! We are excited to expand our South Jersey reach. Make sure to follow us on social media to find out when our opening day will be.
